Day-After-Thanksgiving Day Sandwich

What’s America’s favorite way to eat leftover Thanksgiving turkey? You guessed it: in a sandwich. Specifically, “The-Day-After-Thanksgiving Turkey Sandwich.” Yes, its got an official name.

While variations exist, this sandwich generally consists of thick slabs of toasted white bread covered with a mountain of leftover turkey meat, mashed potatoes or stuffing, cranberry sauce, and brown gravy.

It’s colossal. It’s comforting. It’s as American as apple pie. But a whole lot better.

The-Day-After-Thanksgiving Turkey Sandwich

Ingredients:

1 tablespoon mayonnaise
2 thick slices white bread, preferably Texas toast
2 thick slices leftover roasted turkey
1/4 cup mashed potatoes or stuffing (or both)
1 to 2 tablespoons cranberry sauce
1 to 2 tablespoons brown gravy

Directions:

Spread mayo on both slices of bread. Place turkey slices on one piece of bread. Top with potatoes and/or stuffing, cranberry sauce, and brown gravy. Close sandwich. Slice in half and eat immediately.

Let’s Talk Turkey Sandwich Variations:

* The Pilgrim: Pile roasted turkey, stuffing, cranberry sauce, gravy, and Muenster cheese on white bread.
* Turkey Melt: Arrange turkey on toast, top with Swiss of cheddar cheese, and broil until cheese melts.
* Barbecue Turkey Sandwich: Arrange turkey on toast and cover with your favorite BBQ sauce, cooked bacon strips, and cheddar cheese.
* Gourmet Turkey Sandwich: Place turkey, crisp prosciutto slices, goat cheese, and fresh arugula on toasted Italian bread. Drizzle with extra virgin olive oil.
