Bacon Cheese Muffins
Makes 12 muffins
Ingredients:
2 cups all purpose flour
½ cup grated mozzarella
½ cup grated Parmigiano Reggiano
10 bacon strips, cooked, crushed to bits
3 teaspoons baking powder
2 Tablespoons granulated sugar
¼ teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon white pepper
1 Tablespoon chopped parsley
1 egg
1 cup buttermilk
¼ cup vegetable oil
Instructions:
1. Preheat oven to 400 degrees. Pre-grease muffin pans with baking spray. Or line with muffin paper cups if preferred.
2. Combine the first 10 ingredients. Blend well in a large bowl.
3. In a separate bowl, beat the last 3 ingredients. Add this to the dry ingredients. Try not to over mix. Muffins bake better when the batter is coarse and lumpy.
4. Bake at 400 F degrees for 18-20 minutes. Test with toothpick for doneness. Allow to cool for 5 minutes before removing from pans.
NOTES: Feel free to substitute cheeses with cheddar cheese or other type of grated cheese preferred.
